Lentil & Vegetable Soup (Vegan & CHEAP!)

I first went vegan when I was in college, so I was ballin’ on a budget, to say the least.

One of my favorite recipes to make, that usually lasted the entire weak, was lentil soup! Back then, I only used carrots and celery, but nowadays I’m adding potato to the mix, because………potatoes. Enough said, right?

This recipe is extremely cheap, very healthy, and so hearty and filling.

Ingredients

  • 1 cup red lentils
  • 1 cup green lentils
  • 3 cups water
  • 3 cups vegetable broth
  • 2 cups chopped carrots
  • 3/4 cup chopped celery
  • 2 medium russet potatoes
  • 1/2 medium yellow onion
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 tsp savory
  • 1/4 tsp thyme
  • 1/4 tsp rosemary
  • salt & pepper to taste

Instructions

  1. Throw all of your ingredients into a large soup pot and bring to a boil.
  2. Once boiling, simmer on low-medium until lentils are cooked and vegetables are tender (10-15 min.).
  3. Serve immediately. Store for up to one week.
